| TEXT: | The exhibition will be amazingly interesting to watch. There will be displays of impressive dishes including superb Kyoto dishes by well-known Japanese restaurants, elegant Japanese tea-ceremony dishes, vegetarian dishes, and elaborately-designed Sushi. This exhibition, which has a history of 100 years, started in the 9th year of the Meiji era, although it was suspended during World War II. The show will feature demonstrations of knife skills of Ikama School, in which chefs wearing eboshi (an ancient type of Japanese headwear), hakama (skirt-like pants for men), and kariginu (an ancient type of Japanese vesture), cut fish and chicken on cutting boards without touching them with their hands, and finally arrange them on dishes with style for auspicious occasions. A variety of projects are scheduled. |
